For me, the month of June can only mean one thing – strawberry season!
These ruby red, juicy beauties are a staple of the British summertime. It’s no wonder that I love using them in some of my favourite quick recipes. Check out these delicious 10 Minute Strawberry Cheesecake Pots for example.

I feel like strawberries are the perfect dessert food. They’re delicious, versatile and super healthy! As everyone knows, they’re a really great source of vitamin C but also contain other super important nutrients including manganese, potassium and folate. They’re also low in calories so you can eat them guilt-free!
I decided to create this best 5 minute strawberry sauce recipe to take advantage of the glut of strawberries I get in my garden every year. This smooth and sweet red sauce takes literally just five minutes to make and it’s so very versatile!
This quick strawberry sauce can be used in so many ways; to top off a creamy mountain of ice cream, to drizzle over freshly baked pancakes or waffles, or even to mix through a glass of fizz to create a strawberry flavoured summer drink. The options are pretty much endless.
This super quick 5 minute strawberry sauce also freezes really well. So you can make a nice big batch of it and pop it in the freezer for later. I like to pour it into an ice cube tray and freeze it in little portions. Then you simply pop it out of the tray, quickly defrost it and use it whenever the fancy takes you.
Ingredients
With so many of my quick recipes, I like to keep things really simple. Why complicate stuff when you don’t need to? Simplicity is often the key to quick cooking and this five minute strawberry sauce is no exception.
It literally just uses three ingredients ; strawberries, sugar and a dash of vanilla essence. The sauce would be perfectly lovely without any vanilla added, but I just find the vanilla really elevates the flavour and pairs so well with strawberries which is why I’ve included it in this quick recipe.
Other strawberry sauce recipes will instruct you to simmer everything down on the hob to create a thick and gloopy sauce. This is all well and good, but it takes precious time! I’m not a fan of this as I like my recipes quick. So no heating whatsoever is required to make this delicious strawberry sauce.
Another thing to consider is that heating up strawberries destroys a lot of the natural vitamin C that these juicy fruits have inside them. By keeping the strawberry uncooked you preserve the vitamin C and therefore boost the health benefits !
STEP BY STEP GUIDE TO MAKING THE PERFECT 5 MINUTE STRAWBERRY SAUCE
Lets have a look at a useful step-by-step guide to creating the perfect 5 minute strawberry sauce, including some very useful pictures to help show you the process. This recipe makes 275mls (half a pint) of lovely strawberry sauce. This is enough for several servings – around 6 in total – so a decent amount.
STEP 1;
Start by grabbing 400g (14 oz) of fresh strawberries. Give them a quick rinse and then chop off and discard the stems and leaves. Put the strawberries into a food processor or blender.
STEP 2;
Into the food processor or blender, add 4 tablespoons of caster (superfine) sugar and 1 teaspoon of vanilla essence.
STEP 3;
Next, blend together the strawberries, sugar and vanilla essence until smooth and lump-free. This will take around 30 seconds but will depend on how good your blender or food processor is. If in doubt, give it a little extra time to ensure everything is smooth and well blended. Sometimes you need to pause halfway though to scrape down strawberry chunks if any have stuck onto the sides.
STEP 4;
Nearly done! Next, gradually pour the blended mixture into a sieve that has been placed above a medium sized bowl. As you pour, press the mixture into the sieve with the back of a spoon to encourage it to drip down into the bowl below. By doing this, you’ll remove the fibrous bits which helps to leave a lovely, smooth sauce. This shouldn’t take very long but it’s definitely best done gradually. This avoids the sieve getting flooded.
That’s it! All finished. Serve your strawberry sauce over ice cream, over waffles and pancakes or dilute with water, lemonade or fizzy wine to create a lovely summertime drink.

Ingredients
400g (14 oz) fresh strawberries
4 tbsp. caster (superfine) sugar
1/2 tsp. vanilla essence
Directions
- Wash the strawberries and remove the tops. Place in a blender or food processor
- Add the sugar and vanilla essence to the blender / food processor.
- Blend for around 30-40 seconds, until you have a smooth and lump-free liquid.
- Place a sieve over a medium-sized bowl. Gradually pour the blended strawberry sauce mixture into the sieve, pressing it down with the back of a spoon to encourage it to drip through into the bowl.
- All finished! Pop the sauce into a jug and get ready to pour it over ice cream, pancakes, waffles or (if you are like my daughter), directly into your mouth!
