I am a huge fan of mug cakes! They’re incredibly quick and easy to make and provide the perfect individual portion of something yummy and sweet to indulge in as a snack or dreamy dessert.

Mug cakes really hit all the right notes for a perfect quick recipe, which is why I love making them so often! Marvellous Microwave
To make your perfect five minute blueberry white chocolate mug cake you will need a microwave. Some traditionalists might think it’s madness to make a cake in a microwave but this really isn’t true!
As you can imagine, quick forms of cooking like using a microwave feature heavily in a blog that is all about quick recipes. You might be surprised to find just how light, fluffy and delicious a cake can be when it’s been blitzed for a minute or two on high heat in your microwave.
So why sit around waiting half an hour for a cake to bake slowly in a conventional oven when you can be filling your face with yummy dessert in less than five minutes!?
Berry Nice
For this 5 minute blueberry and white chocolate mug cake I’ve chosen a classic combination. (The classics often really are the best!) Specifically, juicy and tangy blueberries which I think pair beautifully with the creamy and sweet white chocolate.
Now, although cake isn’t exactly famous for being a health food, I like focusing on silver linings in life, so Let’s take a minute to appreciate how fantastically healthy blueberries are! This little round superfood is packed full of essential nutrients including vitamin C, fibre and vitamin K. Not to mention the super-important antioxidants they contain that help our body fight off disease.
These health benefits are surely an extra bonus of using the humble blueberry in a mug cake?!
Ingredients
I’m all about simple, easy ingredients in my recipes and the ingredients that go into this quick blueberry and white chocolate mug cake are definitely no exception.
The basis of the cake has all the ingredients you would expect to find in a traditional cake recipe; flour, fat and sugar. When mixed together, these create the perfect fluffy better. Add a dash of milk too and the whole thing becomes extra smooth and creamy. The perfect consistency for a batter that produces a moist, light and fluffy mug cake. Mmmm.
You’ll notice there is a lack of eggs in this five minute blueberry white chocolate mug cake. Eggs are usually added to cakes to bind everything together and make them lovely and fluffy however thankfully, for this mug cake the addition of egg is unnecessary. The cake is perfectly light and risen without adding egg which means it’s a great recipe for people who are not able to eat eggs.
For the fat, I’ve used vegetable oil. Now, many traditional cakes use butter or margarine for the fat, which of course works very well, however mixing solid fat like butter through a mug cake batter requires a lot of vigorous stirring. This translates to time consuming!
I’m always on the hunt for any ingredients that can save precious time in the kitchen. Therefore for this quick 5 minute blueberry white chocolate mug cake, vegetable oil is the key. It adds the fat content that the cake needs but melts rapidly into the other ingredients, meaning you can stir everything together in just a few seconds to create a perfect, smooth and lump-free batter. Hooray!
Lets take a moment to mention the vanilla essence. Vanilla is an essential addition to add a lovely warm and sweet flavour to the mug cake batter and really complements the warm sweetness of the white chocolate chips.
It’s important that you use proper vanilla essence or extract rather than just vanilla flavouring as the latter is not true vanilla and just doesn’t have such a great, natural flavour. Vanilla extract is a bit more expensive compared to flavouring, but it’s worth the investment for the extra delicious flavour that real extract gives the final cake.
STEP BY STEP GUIDE TO MAKING THE PERFECT 5 MINUTE BLUEBERRY WHITE CHOCOLATE MUG CAKE
Now lets take a look at this useful step by step guide to making your perfect and quick blueberry white chocolate mug cake, including some helpful photos to illustrate the process…
STEP 1;
First off, get yourself a standard mug. Into the mug, put 4 level tablespoons of self raising flour, two level tablespoons of caster (superfine) sugar, 2 tablespoons of vegetable oil, 2 tablespoons of milk and 1/2 teaspoon of vanilla essence.
STEP 2;
Next, take a fork and briskly mix all of these ingredients together in the mug. There may be one or two little lumps at first, but these should dissolve over 20 seconds or so of rapid mixing. (Don’t worry if a few small lumps are still there at the end of the mixing process, these will eventually disappear once the cake is cooked).
STEP 3;
Take one rounded tablespoon of blueberries (this is typically around 8-10 of them) and add them to the batter in the mug. Finally, take one tablespoon of white chocolate chips and also add these to the mug. Stir everything together one last time to combine it all and mix the berries and chocolate evenly throughout the cake batter.
STEP 4;
Put the uncooked cake batter into a microwave and cook on full power for 80-90 seconds (depending on the microwave wattage) until well risen and fluffy. That’s it! All ready to eat. YUMMMMM.

Directions
- In a standard mug, put the flour, sugar, oil, milk and vanilla. Stir it briskly with a fork for about 20 secs until it’s a smooth batter.
- Add the blueberries and white chocolate chips. Stir a few more seconds to combine.
- Pop it into the microwave and cook on full power for 80-90 seconds (depending on microwave wattage) until fluffy and well risen.
- Serve! Goes great with vanilla ice cream.
