5 Minute Blueberry Cheesecake Mug Cake

SUPER QUICK, FRUITY TREAT!

Dessert is a big deal in my house. A huge deal in fact, and my family’s philosophy is that no meal is complete without it. Okay….so that may sound overly dramatic but let’s just put it this way – we are a sweet toothed household, so I’m constantly on the look out for new and exciting dessert recipes to try.

As you might imagine, the quicker the better is my motto and this incredibly quick blueberry cheesecake mug cake hits all the right notes for the perfect after-dinner treat the whole family will go nuts for!

EFFORTLESS DESSERT OPTION

In the last few weeks, something truly weird happened in my household. A particularly busy spell in my day job meant food shopping got put on the back burner and our kitchen cupboards became worrying low in our usual vast array of dessert options. Cue me then frantically trying to conjure up dessert for my family and I realised that the mug cake is the perfect fit for a quick and delicious dessert. One that can be made super fast in your microwave.

I then went through a rather frantic phase of trying out loads of different ingredient combinations in the quest to make the perfect microwave mug cake. (Some combinations were decidedly more successful than others. Some of my attempts should probably never be talked about again, ahem). I knew I was on to a real winner when developing the recipe for this five minute blueberry cheesecake mug cake…as it’s just so bloomin’ delicious!

This mug cake happily combines all the fruity flavour and fluffy texture of a blueberry muffin with the creamy, sweet flavours of blueberry cheesecake. So adding the creamy, fruity flavour of a cheesecake to a mug cake seemed like an excellent idea to me, and all achievable in just 5 minutes! I find that it’s perfect for a quick dessert but can equally be enjoyed as a cheeky tea time treat whilst relaxing with a cuppa.

This super quick mug cake would not be possible without the use of the humble microwave. Ok, so professional chefs would probably scoff at the prospect of making a cake in a microwave but it works so well and is absolutely key to making this blueberry cheesecake mug cake a really rapid recipe. For me, the microwave is key for so many quick recipes! My life would certainly be so much harder without one sitting happily in the corner of my kitchen.

BLUEBERRY BERRY YUMMY

Clearly, you cannot do a blueberry cream cheese mug cake without the star of the show-the humble blueberry! Such an underrated fruit, blueberries are not only delicious, but are also considered a superfood and are both low in calories and yet rich in vitamins and antioxidants. So chucking a few into a cake is certainly no bad thing which is why you’ll find them happily nestling amid the fluffy filling of this 5 minute mug cake.

HEAVENLY MUFFIN CHEESECAKE COMBO

As I’ve already described, this mug cake marries a blueberry muffin with a blueberry cheesecake which means the end result is a mug cake that has a light, fluffy outside and a moist, cream cheesy centre. The two different textures make for much more interesting and decadent result than just a plain old blueberry muffin would be which is why this recipe is so fab and moorish.

SIMPLE INGREDIENTS;

I rarely create recipes with complex ingredients. Complex usually means time consuming, and I’m all about the quick of course!

Everything is beautifully simple in the ingredients for this 5 minute blueberry cheesecake mug cake. All you need to start is your basic cake mix ingredients – self raising flour, oil, sugar and a dash of milk. No need for an egg, as this mug cake rises perfectly well without one.

A dash of vanilla essence adds the traditional vanillary flavour that you’d expect from a cheesecake themed recipe and it’s important to use vanilla essence and not flavouring in this recipe, as vanilla flavouring just doesn’t pack as much punchy flavour as the more potent essence does.

The filling that gives you a cheesecake hit is very simple- just a spoon of full fat cream cheese mixed with a spoon of icing sugar. That’s it! All you then then need to slot this gently into the centre of your uncooked batter in the mug to get your soft and gooey cream cheese centre. YUM.

A final word now on the number of blueberries to add. Just how many you use will depend both on the size of the blueberries and you personal preference. I often think, the fruitier the better, but other people have different tastebuds of course. I’ve recommended 8-10 in this mug cake recipe but you can experiment and see what works best for you.

STEP BY STEP GUIDE TO MAKING THE PERFECT 5 MINUTE BLUEBERRY CREAM CHEESE MUG CAKE

Now lets take a look at this helpful step by step guide to making your perfect and quick blueberry cheesecake mug cake, including handy photos to help….

STEP 1;

First off, grab a standard sized mug. In it, put 4 level tablespoons of self raising flour, two level tablespoons of caster (superfine) sugar, 2 tablespoons of vegetable oil, 2 tablespoons of milk and 1/4 teaspoon of vanilla essence.

STEP 2;

Next, grab yourself a fork and briskly mix all of these ingredients together in the mug. There may be a few little lumps at first, but these should smooth out fine over 20 seconds or so of fast mixing. (Don’t worry if there are a few tiny lumps remaining at the end of your mixing – that doesn’t matter).

STEP 3;

Take 8-10 blueberries (depending on their size and how much fruit you want to pack in) and put these in the mug with the cake batter. Mix it all together briefly with a spoon to combine.

STEP 4;

In a small bowl, pop one level tablespoon full fat cream cheese and one level tablespoon of icing sugar. With a small spoon, stir both together until well combined. This is you cream cheese frosting. (Try not to eat it all right away…)

STEP 5;

Now it’s time to get your yummy cream cheese frosting into your cake mix. Scoop all the frosting up with a tablespoon and plunge this spoon into the centre of your blueberry cake batter, so the tip of the spoon touches the bottom of the mug. Grab a second smaller spoon (or even just use a clean finger) and scrape the frosting off so it ends up nestled nicely in the centre of your cake mix, level with the top.

STEP 6;

Pop it in the microwave for about 90 seconds on full power (900 watt). You may need a little longer or shorter, depending on your individual microwave.

Now take it out of the microwave and serve warm! Mmmmm.

Ingredients

  • 4 level tbsp. self raising flour

  • 2 level tbsp. caster (superfine) sugar

  • 2 tbsp. vegetable oil

  • 2 tbsp. milk

  • 1/4 tsp. vanilla essence

  • 8-10 blueberries

  • 1 level tbsp. full fat cream cheese

  • 1 level tbsp. icing sugar

Directions

  • In a standard sized mug, put the flour, sugar, oil, milk and vanilla essence. Stir briskly with a fork for about 20 secs until well combined.
  • Put the blueberries into this cake mix and stir briefly to combine.
  • In a small bowl, mix together the cream cheese and icing sugar. Scoop this frosting all onto a spoon and then plunge this spoon tip first into the centre of the cake batter, until the tip touches the bottom of the mug. With a smaller spoon or clean finger, scrape off the frosting so it sits snugly in the centre of the cake mix.
  • Put the mug in a 900W microwave for about 90 seconds (it may need a little more or less, depending on your microwave) until fluffy and risen.
  • Serve warm! YUM.
