10 Minute Sweetcorn Fritters

Tips on making the perfect fritter

These delicious little fluffy sweetcorn fritters take only 10 short minutes to make and they are adored by children, making them an ideal quick and easy way to get the kids to eat one of their 5 a day. Sweetcorn itself is a perfect quick cooking ingredient as it requires virtually no preparation- simply open the tin and pop it into your dish. So simple!

Some sweetcorn fritter recipes recommend using plain flour however I find this makes them flat and rather heavy, so I fully advocate using self raising flour instead, to give the fritters a lovely light, fluffy texture. If you don’t have self raising flour available at home, you can just add one level teaspoon of baking powder to plain flour and mix it all together to create your own DIY self raising flour that works just as well in making the perfect fritter as the shop bought variety does.

Another key element to creating the perfect sweetcorn fritter is to ensure the batter is nice and thick, meaning the fluid content needs to be fairly low. I’ve found through trial and error that if you add too much liquid to the batter, the resulting fritters tend to be flat and unevenly cooked. When making these 10 minute sweetcorn fritters you also crucially need to ensure you use a generous amount of sweetcorn –  which should definitely be the star here. The more you use, the more the sweet flavour and yummy crunch of the kernels sing though and the tastier the resulting fritter.

Although these sweetcorn fritters taste great all by themselves, I find the flavour really ‘sings’ when dunked into sweet chill dipping sauce so I have suggested that you serve your fritters with this. However, you can always experiment with other sauces such as Chinese Hoisin or BBQ if you’d like to. Or if you’re anything like my kids are, you’ll be happy if they’re served with lashings of tomato ketchup!

Time saving tips

The main way I’ve ensured these 10 minute sweetcorn fritters are super quick to make is by creating a recipe that requires no chopping or slicing at all. None! I’m a huge fan in my quick cooking of avoiding chopping and slicing wherever possible as it’s such a time saver.

Other sweetcorn fritter recipes advocate the addition of ingredients such as finely chopped spring onions or red chilies, which of course is does add a nice flavour however preparing these ingredients takes up precious time and I’ve found this to be unnecessary – plenty of extra flavour can be added to the fritters with the addition of two lovely dried herbs – dried chives to add a little zesty onion taste and dried tarragon to give an earthy richness. Both of these herbs work brilliantly together and in my opinion, create a perfectly flavoured fritter without any faff of prepping and chopping your ingredients. Simply add the dried herbs into the batter directly from their jars with no fuss. Perfect!

As you’ll see, most of the measurements in this 10 minute sweetcorn fritter recipe are in tablespoons and teaspoons rather than grams or ounces. This is, of course, to save precious time. It’s much easier to spoon your ingredients straight into the mixing bowl than having to faff about with weighing scales so this is another important time saving element here.

Dairy-free alternative

Finally, it’s worth mentioning that although I have used cows milk in this sweetcorn fritter recipe, my son has a dairy allergy and so I often make them with oat-based milk which works perfectly well so feel free to use this in place of cow’s milk if you would prefer.

10 minute sweetcorn fritters – step by step

Makes 12-15 fritters

STEP BY STEP INSTRUCTIONS 10 minute sweetcorn fritters

  1. Grab a large frying pan and put 1 teaspoon of blended olive oil into it. (Don’t use the extra virgin type as this isn’t so good for cooking). Heat the pan over medium-high heat.

2) In a medium bowl, add five heaped tablespoons of self-raising flour, two eggs, five tablespoons of milk and 1/3 teaspoon of salt.

3) Whisk these ingredients briskly until combined and no lumps remain. You can use an electric whisk if you’d like to but I find this step only takes a minute or so with a hand held whisk so I don’t think an electric one is really necessary.

4) Next, add one drained 198g (7 oz) can of sweetcorn, then pop in 1 teaspoon of dried tarragon and 1 teaspoon of dried chives to this mixture. Stir everything briefly with a spoon to combine it nicely and create your fritter batter. You want to end up with a batter that has the consistency of thick cream.

5) Drop the batter in 1 rounded tablespoon amounts into the hot pan. If your pan is large enough you might be able to fit them all in together (in which case you’ll probably be done in less than 10 minutes!) but often you need to cook them in 2 batches. Don’t worry if they’re not all perfectly round in shape in exactly the same size, mine never are and I think that’s part of their homemade charm.

6) Cook each fritter on one side for 1-2 minutes then flip over and cook on the other side for a further 1-2 minutes until fluffy and golden.

7) Remove each sweetcorn fritter from the pan and pop onto a serving disk. Serve warm with about five tablespoons of sweet chilli sauce on the side for dipping, (although this is optional). Yum!

Ingredients

  • 1 tsp olive oil

  • 5 heaped tbsp self raising flour

  • 2 eggs

  • 5 tbsp milk

  • 1/3rd tsp salt

  • One 198g (7 oz) can sweetcorn, drained

  • 1 tsp dried tarragon

  • 1 tsp dried chives

  • Approx 5 tbsp sweet chilli sauce to serve (optional)

Directions

  • Heat the olive oil in a large frying pan over medium high heat.
  • In a medium bowl, add the flour, eggs, milk and salt. Whisk briskly for approx. 1 min until combined and smooth.
  • Add the sweetcorn, tarragon and chives to the mixture. Stir briefly with a spoon to combine.
  • Drop the batter in 1 rounded tablespoon amounts into the hot pan
  • Cook each fritter for 1-2 minutes then flip over and cook on the other side for a further 1-2 minutes until fluffy and golden
  • Serve warm with the sweet chilli dipping sauce
